Meet the Producers
Aseel connects you directly to certified Herat producers. Every jar names its maker, and every thread traces back to the cooperative that grew it.
Know Your Grade
Saffron is graded by the cut and color of the thread. Every Aseel listing names its grade. Threads only, never powder, never blends.
Super Negin
All-red, unbroken threads at their full length, with the deepest color and strongest aroma the flower gives. For gifts, guests and dishes where saffron leads the plate.
Negin
All-red threads, slightly shorter in cut. The same field and the same harvest. This is the working grade for cooks who use saffron every week.
Sargol & Pushal
Cut red tips, or threads with a little of the yellow style attached. Honest saffron at a working price, made for stocks, bakes and big pots.
How to Spot Real Saffron
Quality saffron reveals itself through its color, aroma, taste, and threads. Here’s what to look for when choosing authentic saffron.
- 1
Threads, never powder
Whole threads flare like tiny trumpets and cannot be faked cheaply. Powder hides fillers. We sell threads only.
- 2
The cold-water test
Real threads release their gold slowly and stay crimson. Dyed fakes bleed color in seconds and turn pale.
- 3
Aroma and taste
Honeyed, floral, a little like sweet hay, but the taste is faintly bitter, never sugary. Sweetness means dye.
- 4
The price floor
Hand-picking about 150 flowers for a single gram sets a real cost. Saffron sold far below market price deserves your doubt.
Every Aseel jar traces to a named, certified Herat producer. The cooperative that grew it is right on the label.
Certified, Not Just Promised
Certification is the anti-adulteration answer: independent inspectors in the fields and the drying rooms, year after year.

EU Organic
A three-year conversion under annual independent inspection, no shortcuts exist. Two of our producers cleared it in July 2025, among the first in Afghanistan.

ISO 22000
Food-safety management at the producer: clean handling from sorting table to sealed jar, audited to the international standard.
From Flower to Saffron
A journey of patience and skill, traceable from the fields of Herat straight to your kitchen.
Step 1Grown in Herat
Well-drained highland soil, hot dry summers and cold winters, the climate the saffron crocus wants. About 95% of Afghanistan's saffron grows here.
Step 2Picked at dawn
The harvest opens in mid-October and lasts only a few short weeks. Each flower opens once — and is picked by hand that same morning.
Step 3Separated & dried the same day
Three stigmas per flower, separated by hand and dried gently in controlled warmth — the step that locks in color, flavor and aroma.
Step 4Graded, sealed & shipped
Graded by thread, sealed in airtight glass away from light and moisture, and shipped to your door through Aseel in 14 days.
Skill You Can Taste
Each autumn, tens of thousands of seasonal harvesters, most of them rural Herati women, bring in the crop. Every flower is picked at dawn on the day it opens; three stigmas are separated by hand the same day. That skill, repeated flower by flower, is why these threads arrive whole, deep red and intensely aromatic.

Questions
Super Negin is the highest grade of saffron: only the longest all-red threads, with none of the yellow style attached. That is where the deepest color and strongest aroma live, which is why it is the grade to buy for gifts and for dishes where saffron leads the plate.
Super Negin is best for gifts and dishes where saffron is the star. Negin is the everyday cooking grade. Sargol and Pushal are honest saffron at a working price for stocks, bakes and big pots. Every Aseel listing names its grade.
A pinch of 10 to 15 threads is enough for a whole dish serving four to six people. Bloom the threads in warm water or milk first to release the color and aroma, and a single gram will last for weeks.
Some of it is. Two of the five Herat producers on Aseel hold EU Organic certification, earned through a full three-year inspection cycle. Every listing states its producer's certifications, so you always know exactly what you are buying.
Herat saffron has been honored with the Superior Taste Award from the International Taste Institute in Brussels for 10 years in a row. The region grows about 95% of Afghanistan's saffron, and its well-drained highland soil, hot dry summers and cold winters give the crocus exactly what it wants.
Threads, always. Whole saffron threads cannot be faked cheaply and you can see exactly what you are getting. Saffron powder is the easiest form to adulterate with fillers and dyes, which is why Aseel sells threads only.
Store saffron in a sealed jar away from light, heat and moisture. A cool, dark cupboard is perfect. Stored this way, saffron threads keep their color and aroma for two years or more.
